Leaving the house without my watch  (similar here) makes me feel completely out of balance. The days I forget to put it on before heading to work, I always have a feeling like something is not right throughout the day.  I am madly in love with my watch. I once left it at Soul Cycle and called them sobbing while I over-dramatically told them my life was over. Thankfully some good samaritan turned it in! I hope God gave them a VERY good reward. Anyway, although I love my watch to the moon and back, it really isn’t the most casual of watches. I would get nervous if I wore it out boating or camping. What I need is something that is still classic but a little more casual. 
Lately I have been seeing Daniel Wellington watches pop up here and there on my Instagram and Pinterest feed. Usually I am not big on watch trends–sorry but I am so over the Marc Jacobs watch, really was never a fan to begin with anyway.  I think watches should be more of an investment piece than a trend. Well I am all onboard with this preppy trend. Daniel Wellington watches are aesthetically pleasing with a clean, simple design for an everyday casual look for both men and women. During this winter vortex I can only think of wanting to wear layers upon layers upon layers upon layers. Really rethinking my poor life choice of not moving to a year-round sunshine state. Anyway, you have heard me complain how cold I always am–my cardigan collection is quite impressive I would like to brag. But what is better than a cardigan? A wrap! I usually use a scarf to wrap my body while trying (and crying) to stay warm, but a wrap is an item that I need to invest in and wear every.single.day.of.winter. Or maybe I should move to a warmer state? Thoughts?!

Normally I am not one to wear a lot of jewelry, I find less is more when it comes to it.  I used to wear  statement necklaces all the time, but lately have found myself not being so drawn towards such chunky necklaces. I do, sometimes, still wear drop earrings when it’s a fancy event or a fun night out but nothing really over the top. These drop earrings are perfect for such occasions. Usually when I go out I put on my everyday jewelry and maybe change my pearls to another pair of studs–getting pretty wild these days. Anyway, I have been getting a little tired my costume jewelry and want to add a few more pieces into the mix. The crystal ball cuff by Marlyn Schiff is a perfect size that it is not over-whelming yet still makes a statement. I also love the simplicity of this pearl ring,  as I am a sucker for anything with a pearl, I would wear this on a regular basis!

 Brunch as a woman, and a former New Yorker, is a rite of passage. Whether I am brunching at a restaurant with a few friends and one-too-many mimosas, or brunching at home on the weekends after you have slept in–I will find a way to brunch! I like to start my mornings off on a good note, as I always have more energy and feel better when I have had a healthy breakfast. So if I am making breakfast, I want to make it as healthy as I possibly can—leaving room for more mimosas obviously. 
Over the weekend I made my first ever gluten-free pumpkin oatmeal pancakes. I was a little skeptical because of not adding eggs, but they turned out to be delicious!
Ingredients
Makes 4 serving

1 cup plus 2 tablespoons gluten-free rolled oats
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger powder
1/4 teaspoon cloves
1/2 teaspoon salt
1/2 baking soda
2/3 cup pumpkin puree
1/3 cup unsweetened applesauce
1/3 cup coconut or almond milk
2 tablespoon coconut oil, melted
1 tablespoon 100% pure maple syrup
1 teaspoon vanilla extract

Egg Replacer
2/3 cup water
2 tablespoons ground flax seed
Prepare the egg replacer by mixing the ground flax seeds and water. Allow to sit for 5 minutes.
Blend the oats in a high speed blender until finely ground. Add the spices, salt, and baking soda. 
In another bowl, whisk together the pumpkin, applesauce, milk, melted coconut. maple syrup, vanilla, and egg replacer.
Add the wet ingredients to the dry and stir until just combined. Do not over mix.
Heat a non-stick pan or cast iron skillet over a medium heat (350 degree for an electric griddle). Lightly oil (extra virgin olive oil) or coconut oil melted. 
Once the pan is hot, pour 1/4 cup amounts of the batter and gently spread the circles. Cook until bubbles form around the edges of the pancakes. 
*these pancakes take slightly longer to cook than regular pancakes, so just keep the heat on medium and give them some time*
Flip and cook for another 2 minutes on the other side.

I added blueberries because I wanted some fruit. Then I drizzled 100% pure maple syrup (organic agave nectar works as well) all over.  Our first few pancakes were a little flimsy, so we added more oats to the batter before making a few more. I would highly recommend using more oats, you can tell in the texture of the batter once it become thicker. The pancakes turned out to be so delicious!! They were filling, but I did not feel overly-stuffed. I can’t wait to make them again… next weekend!
