Over the past month I have picked up a few projects, joined two new committee’s, started nutrition school, and am continuing to try and keep up with this rapidly growing blog of mine.  Needless to say I am a busy bee these days! Currently I work on either my couch or bed with my laptop placed on my lap, which isn’t the most idle space to really concentrate, and not the best position for my posture. Now that I have more on my plate, I am dreaming of a much bigger, more efficient and pretty, space to make magic and study my little tush off. What I need is a new desk (desperately), a comfy-cute chair, wouldn’t mind a cabinet, a vision board is obviously a must…. ok I need an entire office to myself. I have few space and decor inspiration ideas that I have been gathering on my Pinterest board. I think the space where you work everyday should be a place of comfort and beauty.  I log in A LOT of hours blogging and working on school stuff, so I need my space to reflect who I am, who I want to be, and who I am becoming. I need a space that will continue to inspire and motivate me. If you are not in love with your office space, you will never want to be in there working.

If you have been following my Instagram account lately, you are well aware that I am OBSESSED with my new Chateau Parka from J.Crew. I have been looking for a grey, everyday wear coat and this one was too good to be true!  It bellows at the bottom which causes the fit to run a little big, but the shoulders fit almost true to size. I went down a size–probably could have gone down two sizes but I like my winter coats to be a bit bigger to make room for layering. The fur trim adds a nice touch of detail to it, but if that isn’t your taste, it is removable. My only complaint is that the neckline runs a bit high–or maybe I have a short neck–but it rubs against my chin, and since I unfortunately have sensitive skin, it irritates it a little. I guess that is why someone created scarves–genius idea.

The color is truly beautiful and the detailing of the pockets is a nice touch. I love a good pocket! It has a casual, yet polished look. The wool material keeps you warm during a polar-vortex, which is inevitable in the midwest. 
The best part: when I flip the hood up, I look like a lion.

I’ve noticed most of my winter wear consist of a lot of cardigans and Tippi sweaters. It is time for a change. I have been eyeing this Cotton Cable Sweater from J.Crew for a while now. It currently comes in navy and ivory. Both great colors, maybe I will get both–you can never have too much of a good thing! The reviews say it runs a little large, so I would suggest going down a size. This sweater you can wear throughout winter and during spring! Hello nautical yacht wear!

Lately I have been trying to learn new recipes and taking a stab at cooking different types of food. I am a soup fan– I’ve never met a tomato basil soup I didn’t like and want to have every day of the week. Well a few months ago I tasted my very first sweet potato and kale soup and it is all I have been able to think about since then. I figured why not make my own dreams come true and try making it as my first ever attempt at making soup. 
Anyone else have that “how do they do it?” feel about soup? It is so simple, yet so complex.
Sweet Potato and Kale Soup
makes for 4 servings
Ingredients
1 medium onion, coarsely chopped
1 clove minced garlic
1 red or yellow bell pepper, chopped
3 medium sweet potatoes, cubed
5 cups low-sodium chicken or vegetable broth
1/4 teaspoon sea salt
1/4 teaspoon freshly ground pepper
1 can coconut milk
1 bunch dinosaur kale, de-steemed and thinly sliced
In a blender, add the chopped onion, bell peppers (I only used the red bell pepper), garlic, sweet potatoes and broth. Puree until your liking. 
*You can skip liquifying the ingredients if you prefer a chunkier soup, and put it all in a soup pot.

After pureeing, pour into a soup pot. Bring to boil. Reduce heat and simmer for 5 minutes. Add coconut milk, kale, salt and pepper. Cook for 3-4 minutes.

Although it taste good, to be honest I wished it was a little more creamier. The soup was still a little chunky and too watery for me. I would maybe add more potatoes, and less broth. And maybe try smashing the potatoes before mixing it with the other ingredients. I will have to try it again and play around with different techniques. Practice makes perfect!
