Somehow I always find a certain food or recipe that I become obsessed with and will eat, no crave, it constantly. Right now my food of choice is energy bites (along with green smoothie bowls). I just can’t get enough of them! And it does not matter to me what the flavor is–although I am pretty partial to the matcha balls from Alchemy. I usually buy energy bites from a cafe or juice bar, but have been wanting to make them because, well, I crave them!

Once deciding I was finally going to make these little balls of heaven I went straight to the most reliable source for all my needs, Pinterest. After scrolling through what seemed like hundreds of gluten free energy ball recipes, I found one that sounded pretty yummy and seemed appropriate for the season. You guessed it, pumpkin energy bites! So basic, yet so good! Now before you start throwing Ugg boots and Michael Kors watches at me and think that I am on my way to Starbucks for a pumpkin spice latte–which I never have had before btw– let me justify my love for pumpkin. Loaded with lots of Vitamin A and E and a good source of iron and fiber, pumpkin has a lot of health benefits. It is great for your digestive and immune system, and it aids in weight loss. Plus it is just so darn good!

These energy, no bake, bites are easy to make, only taking around 10 minutes to prepare.

Ingredients

3/8 cup pumpkin puree

6 tablespoons coconut flour

1 cup raisins

1 cup walnuts (I used almonds instead)

cinnamon for rolling

1 teaspoon pumpkin pie spice

First, place the raisins in a blender and pulse until broken into pieces. Add in walnuts (or almonds) and pumpkin puree, blend until smooth. If you use almonds instead of walnuts I suggest putting the almonds in a ziplock bag and smashing them into pieces. It will make blending them much easier—I learned this the hard way.

When blended and smooth add in coconut flour and pumpkin pie spice until it starts to look like dough. I added a little more pumpkin puree after this since the dough looked a little dry.

Roll the dough into ball forms. Take a small bowl to place the cinnamon in, do this to your liking. Take the pumpkin balls and roll them around the cinnamon until covered. Then place the balls onto a lined pan sheet. Store the sheet into the fridge or freezer until you are ready to serve or eat.

I eat energy bites for my afternoon treat or as a  pre-workout snack.
